Herb Roasted Prime Rib
Ingredients:
- 1 (5-7 pound) prime rib roast, bone-in
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
Directions:
- Preparation:
- Remove the prime rib from the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps it cook more evenly.
- Preheat Oven:
- Preheat your oven to 450°F (230°C).
- Seasoning:
- In a small bowl, combine the minced garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub this herb mixture all over the prime rib roast, making sure to coat all sides evenly.
- Roasting:
- Place the prime rib roast, fat side up, on a roasting rack in a roasting pan.
- Put the roast in the preheated oven and roast for 15 minutes. This initial high heat will help create a flavorful crust.
- Lower Temperature:
- After 15 minutes, reduce the oven temperature to 325°F (165°C).
- Continue roasting until the internal temperature reaches your desired doneness:
- Rare: 120-125°F (49-52°C)
- Medium rare: 130-135°F (54-57°C)
- Medium: 140-145°F (60-63°C)
- This usually takes about 1.5 to 2 hours depending on the size of the roast.
- Resting:
- Remove the roast from the oven and tent loosely with aluminum foil.
- Let it rest for at least 20 minutes before slicing. Resting allows the juices to redistribute, making the meat more tender and juicy.
- Serving:
- Slice the prime rib against the grain to your preferred thickness.
- Serve with your favorite sides such as roasted vegetables, mashed potatoes, or horseradish sauce.
