Healthy Chicken Casserole
Ingredients:
- 2 cups cooked chicken breast, shredded
- 1 cup broccoli florets, steamed
- 1 cup carrots, diced
- 1 cup mushrooms, sliced
- 1 cup low-fat Greek yogurt
- 1/2 cup low-sodium chicken broth
- 1/2 cup shredded low-fat cheddar cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup whole wheat breadcrumbs (optional)
Directions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.
- Add diced carrots and sliced mushrooms to the skillet. Cook for an additional 5 minutes until vegetables are tender.
- In a large mixing bowl, combine the cooked chicken, steamed broccoli, sautéed vegetables, Greek yogurt, chicken broth, dried thyme, salt, and pepper. Mix thoroughly.
- Transfer the mixture into a greased casserole dish, spreading evenly.
- Sprinkle shredded cheddar cheese evenly over the top.
- If desired, sprinkle whole wheat breadcrumbs on top for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
- Remove from oven and let it cool for a few minutes before serving.
