Healthy Chicken Casserole

Ingredients:

  • 2 cups cooked chicken breast, shredded
  • 1 cup broccoli florets, steamed
  • 1 cup carrots, diced
  • 1 cup mushrooms, sliced
  • 1 cup low-fat Greek yogurt
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup shredded low-fat cheddar cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup whole wheat breadcrumbs (optional)

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.
  3. Add diced carrots and sliced mushrooms to the skillet. Cook for an additional 5 minutes until vegetables are tender.
  4. In a large mixing bowl, combine the cooked chicken, steamed broccoli, sautéed vegetables, Greek yogurt, chicken broth, dried thyme, salt, and pepper. Mix thoroughly.
  5. Transfer the mixture into a greased casserole dish, spreading evenly.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. If desired, sprinkle whole wheat breadcrumbs on top for added crunch.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  9. Remove from oven and let it cool for a few minutes before serving.
