  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine chickpeas, cucumber, bell pepper, onion, tomatoes, olives, and feta.
  2. In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
  3. Pour dressing over salad, toss well, and chill for 15 minutes before serving.

🍝 Tuesday: Creamy Garlic Parmesan Pasta

Ingredients:

  • 8 oz fettuccine (or any pasta)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, melt butter and sauté garlic until fragrant (about 1 minute).
  3. Stir in heavy cream and bring to a gentle simmer.
  4. Add Parmesan, salt, and pepper. Stir until sauce thickens.
  5. Toss pasta in sauce, garnish with parsley, and serve warm.

🍛 Wednesday: Chicken Curry with Coconut Milk

Ingredients:

  • 2 tbsp vegetable oil
  • 1 lb chicken breast, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 can (13.5 oz) coconut milk
  • 1 cup diced tomatoes
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a large skillet. Add onions and sauté until golden.
  2. Stir in garlic, curry powder, and turmeric; cook 1 minute.
  3. Add chicken and brown lightly on all sides.
  4. Pour in coconut milk and tomatoes, reduce heat, and simmer 20 minutes.

Ingredients:

  • 1 lb shrimp, peeled and deveined

  • 6 small tortillas
  • 1 cup shredded cabbage
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1/2 avocado, sliced

Instructions:

  1. Toss shrimp with olive oil and spices.

  3. Mix sour cream and lime juice to make a quick sauce.
  4. Assemble tacos: tortilla + cabbage + shrimp + sauce + avocado slices.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced

  • 4 cups vegetable broth
