Sweet & Sour Cashew Stir-fry
Ingredients:
- 1 cup cashews
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 cup pineapple chunks
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp cornstarch mixed with 2 tbsp water
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Directions:
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat. Add cashews and stir-fry until golden brown. Remove and set aside.
- In the same pan, add the remaining oil. Sauté garlic and onions until fragrant and translucent.
- Add bell pepper and carrot. Stir-fry for 3-4 minutes until they start to soften but still crisp.
- Add pineapple chunks and cook for another 2 minutes.
- In a small bowl, mix soy sauce, rice vinegar, ketchup, and brown sugar. Pour the sauce into the pan.
- Stir well and let it simmer for 2 minutes.
- Add the cornstarch slurry to the pan and stir until the sauce thickens.
- Return the cashews to the pan, mix well, and cook for another minute.
- Season with salt and pepper to taste.
- Garnish with chopped green onions if desired. Serve hot with steamed rice or noodles.
