Sweet & Sour Cashew Stir-fry

Ingredients:

  • 1 cup cashews
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 cup pineapple chunks
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Directions:

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat. Add cashews and stir-fry until golden brown. Remove and set aside.
  2. In the same pan, add the remaining oil. Sauté garlic and onions until fragrant and translucent.
  3. Add bell pepper and carrot. Stir-fry for 3-4 minutes until they start to soften but still crisp.
  4. Add pineapple chunks and cook for another 2 minutes.
  5. In a small bowl, mix soy sauce, rice vinegar, ketchup, and brown sugar. Pour the sauce into the pan.
  6. Stir well and let it simmer for 2 minutes.
  7. Add the cornstarch slurry to the pan and stir until the sauce thickens.
  8. Return the cashews to the pan, mix well, and cook for another minute.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped green onions if desired. Serve hot with steamed rice or noodles.
