Herb roasted Prime Rib

Herb Roasted Prime Rib

Ingredients:

  • 1 (5-7 pound) prime rib roast, bone-in
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper

Directions:

  1. Preparation:
  • Remove the prime rib from the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps it cook more evenly.
  1. Preheat Oven:
  • Preheat your oven to 450°F (230°C).
  1. Seasoning:
  • In a small bowl, combine the minced garlic, rosemary, thyme, olive oil, salt, and pepper.
  • Rub this herb mixture all over the prime rib roast, making sure to coat all sides evenly.
  1. Roasting:
  • Place the prime rib roast, fat side up, on a roasting rack in a roasting pan.
  • Put the roast in the preheated oven and roast for 15 minutes. This initial high heat will help create a flavorful crust.
  1. Lower Temperature:
  • After 15 minutes, reduce the oven temperature to 325°F (165°C).
  • Continue roasting until the internal temperature reaches your desired doneness:
    • Rare: 120-125°F (49-52°C)
    • Medium rare: 130-135°F (54-57°C)
    • Medium: 140-145°F (60-63°C)
  • This usually takes about 1.5 to 2 hours depending on the size of the roast.
  1. Resting:
  • Remove the roast from the oven and tent loosely with aluminum foil.
  • Let it rest for at least 20 minutes before slicing. Resting allows the juices to redistribute, making the meat more tender and juicy.
  1. Serving:
  • Slice the prime rib against the grain to your preferred thickness.
  • Serve with your favorite sides such as roasted vegetables, mashed potatoes, or horseradish sauce.

Enjoy your delicious herb roasted prime rib!
