Tuscan Butter Roast Chicken – Directions for Preparation

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the chicken by patting it dry with paper towels. This helps to achieve crispy skin.
  3. In a small bowl, mix together 4 tablespoons of softened unsalted butter, 3 minced garlic cloves, 1 tablespoon of chopped fresh rosemary, 1 tablespoon of chopped fresh thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  4. Gently loosen the skin of the chicken breast by sliding your fingers between the skin and the meat, being careful not to tear the skin.
  5. Spread half of the butter mixture evenly under the skin of the chicken breasts and the remaining butter all over the outside of the chicken.
  6. Place the chicken on a roasting pan or ovenproof skillet.
  7. Roast the chicken in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  8. Let the chicken rest for 10 minutes before carving to allow the juices to redistribute.
  9. Serve with roasted vegetables or your favorite side dishes.
