Tuscan Butter Roast Chicken – Directions for Preparation
- Preheat your oven to 425°F (220°C).
- Prepare the chicken by patting it dry with paper towels. This helps to achieve crispy skin.
- In a small bowl, mix together 4 tablespoons of softened unsalted butter, 3 minced garlic cloves, 1 tablespoon of chopped fresh rosemary, 1 tablespoon of chopped fresh thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Gently loosen the skin of the chicken breast by sliding your fingers between the skin and the meat, being careful not to tear the skin.
- Spread half of the butter mixture evenly under the skin of the chicken breasts and the remaining butter all over the outside of the chicken.
- Place the chicken on a roasting pan or ovenproof skillet.
- Roast the chicken in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
- Let the chicken rest for 10 minutes before carving to allow the juices to redistribute.
