1. Quinoa Salad with Roasted Vege

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 bell pepper (any color), chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Lemon juice

Instructions: Cook quinoa in vegetable broth. Roast vegetables at 400°F (200°C) for 20 minutes with olive oil, salt, and pepper. Combine cooked quinoa, roasted vegetables, and cherry tomatoes. Drizzle with lemon juice.

2. Baked Salmon with Asparagus

Ingredients:

  • 2 salmon fillets
  • 1 bunch asparagus
  • 2 tbsp olive oil
  • Lemon slices
  • Salt, pepper, and dill

Instructions: Preheat oven to 400°F (200°C). Place salmon and asparagus on a baking sheet. Drizzle with olive oil, lemon slices, salt, pepper, and dill. Bake for 12-15 minutes.

3. Chicken and Vegetable Stire fry

Ingredients:

  • 1 lb chicken breast, diced
  • 1 broccoli floret
  • 1 carrot, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions: Stir-fry chicken until cooked. Add vegetables and garlic. Cook until tender-crisp. Add soy sauce and sesame oil. Serve hot.

4. Avocado Toast with Egg

Ingredients:

  • 2 slices whole-wheat toast
  • 1 avocado, mashed
  • 2 eggs
  • Salt and pepper
  • Red pepper flakes (optional)

Instructions: Toast bread. Mash avocado and spread on toast. Fry or poach eggs. Place eggs on avocado toast. Season with salt, pepper, and red pepper flakes.

5. Lentil Soup

Ingredients:

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin

Instructions: Sauté onion, carrots, and celery. Add garlic and cumin. Add lentils and vegetable broth. Simmer for 20-30 minutes until lentils are tender.

6. Greek Yogurt Parfait

Ingredients:

  • 1 cup Greek yogurt
  • 1/2 cup granola
  • 1 cup mixed berries
  • Honey (optional)

Instructions: Layer Greek yogurt, granola, and berries in a glass. Drizzle with honey if desired.

7. Turkey Lettuce Wraps

Ingredients:

  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1/4 cup soy sauce
  • Lettuce leaves

Instructions: Cook ground turkey with onion, garlic, and bell pepper. Add soy sauce. Serve in lettuce leaves.

8. Sweet Potato and Black Bean Bowls

Ingredients:

  • 2 sweet potatoes, cubed
  • 1 can black beans, rinsed
  • 1 avocado, sliced
  • 1/2 cup corn
  • Lime juice

Instructions: Roast sweet potatoes at 400°F (200°C) for 20 minutes. Combine roasted sweet potatoes, black beans, corn, and avocado. Drizzle with lime juice.

9. Egg and Spinach Scramble

Ingredients:

  • 3 eggs
  • 2 cups spinach
  • 1/4 onion, chopped
  • Salt and pepper

Instructions: Sauté onion. Add spinach and cook until wilted. Scramble eggs and add to the pan. Season with salt and pepper.

10. Chickpea Curry

Ingredients:

  • 1 can chickpeas, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup coconut milk
  • Curry powder

Instructions: Sauté onion and garlic. Add chickpeas, diced tomatoes, coconut milk, and curry powder. Simmer for 15-20 minutes.Edit”Healthy food recipes”
